Storing food

Tomato sauce, Tomato paste,Tomato Relish,tomato Bread, canning tomatoes(in glass Jars),Red tomato jam, green tomato jam, also freeze tomatoes. You can replace chilis in most any tomato recipe above or mix in chilis in the tomatos to taste. You can dry chilis, hot or sweet to use later, like Paprika, both hot or sweet ground pepper. You can pickle peppers also.
I would freeze any pea, bean or corn, unless you let them dry in the plant & stored them in a sealed glass jar.
Onions & garlic I would hang up to dry, then store in a cool dry place. see group "Garden Pictures" for this hangto dry or cure.
Potatoes(white or sweet),carrots & other root crops I would mulch with 6-12 inches of leaves or straw and dig as I needed them. You could keep them in the frig for a week & use as needed. Or you could store them on a wire shelf in a single layer, so air could move over them. This would make it easy to spot bad spots.
Store potatoes at 32-40 degrees F & 80-90 % relative humidity(cold & moist).
Do not put apple near potatoes in storage.

Three things are needed to anwser your Question:
1) What tools & skills do you have now?
2)What kind/type of vegetable/fruit-food do you want to store?
3)What taste do you have? Can goods & pickled goods or dried goods taste different.
They also taste different then store bought goods.
You will need a freezer & freezer bags, vacuum sealed bags last longer, but you will need a vacuum sealer & vacuum bags.
Drying, then placing in a air tight container, glass jar is best, but you will need a dehydrater.
Most meats can be smoked, with a smoker.
Canning in the UK. is to preserve food in a tin cans ( it was used here in the USA. in the 1800- early 1900's.). Today in the USA. we can in glass jars( Ball & Kerr Jars).
I get my ball jars from Walmart. You will need a large pot to sterilize the jars, a steam pressure canner to seal jars(there are other ways too).
Lacto-fermentation-Sauerkraut,chutneys,relishies,pickles,kimchi.
You will need Vinegar,canning salts,glass jars,stove.
A fruit press to make cider.
You can let beans dry on the vine, then pick them, lay them out to dry some more & shell them. Once they are shelled, store them in jars, you can do the same with any seeds or grains, also.
Fruit syrups,jellys,jams & honey can be stored in the same jars for canning & pickling.
Last, but not least, you can store root crops in the ground( under a heavy mulch) all winter & dig them as you need them. You can store them & winter squash in a bured 55gallon drum or a cellar, if you have one.
